yesterday, I took my iPhone to this store to install some apps, it was synchronized with iTunes on it's machine.
my questions, should I be concerned that the guys working there can access the photos which I will be taking with my iPhone in the future?
it's not Apple Store, it is just a regular hardware store on the corner, and I'm concerned about future photos only, not the ones already on the phone.

The App Store? No one works in the App Store, it's all digital. Although Apple employees do monitor the App Store, but why would they need to look at your photos lol? Those guys can't access anything on your device, all they do is just check apps uploaded by developers (in case the app doesn't follow Apple's regulations).
So no, be assured that these guys won't check your photos. Although developers on the other hand, some might release an app that could access your photo gallery but that's very unlikely on the App Store (since Apple would remove it), the one that stays are for you to manage so you can upload them on to certain services (eg: Facebook).

I use photo apps on my IPhone a lot to edit my pictures and frame them and things of that nature.
I was wondering do the pictures I edit in whatever photo app I'm using go onto the web or something,because it has to go SOMEWHERE (besides MY photo album)
