How to retrieve lost datas from iPhone 3G (photos, notes, applications)?

Before I update my iPhone 3G, its version was 2.0 or 2.1.
After updating it with 3.0, all of my datas like (notes, text, photos, etc...) were gone.
How do I retrieve it and not lose any of my new datas (photos, text, notes, applications, etc...) from 3.0?
